how do you keep your jelly roll pans from twisting and warping in the oven?
I don't think it's possible to keep that from happening. Everything I've tried is a lost cause and fails miserably....even Martha Stewart admits it's a losing battle.
A jelly roll pan has a bit of a side (like a very peremptorily dry pan) a cookie slab typically has reasonable one side to grip to jerk it out of the oven. Some people call a jelly roll pan a cookie blanket because you can cut cookies on it. I meditate on if you tried to use a realistic cookie crib-sheet (the one with only one side) you might have a stew keeping everything together.
it all depends on the lip around the pan. some cookie sheets fair have a diet raised end and some have a 1/2 inch lip all the way around.
She should use the pan with the lip all the way around so the bruise doesn’t cook off the edges.
However she could specialty the non-lip cookie journal with aluminum baffle and survive a 1 inch heartfelt lip all around the pumpkin roll.
